Chocolate Pinwheels Make sugar cookies first using vanilla and then follow the recipe below to complete. ******************************************************************* Ethel's sugar cookies 3/4 cup shortening (part butter) 1 cup sugar 2 eggs 1/2 teaspoon lemon flavoring (or use 1 teaspoon vanilla) 2 1/2 cups of flour 1 teaspoon baking powder 1 teaspoon salt Mix well shortening, sugar, eggs and flavoring. Measure flour by dip level method or by sifting. Blend flour baking powder, and salt; stir in. chill at least one hour. Roll 1/8 inch thick on floured board. Cut with 3 inch cooky cutter. Place on ungreased cooky sheet. Bake at 400 degrees for 6 to 8 minutes. Make about 4 dozen cookies. ****************************************************************** Make sugar cooky dough using vanilla for flavoring. Divide dough into 2 parts. Into one part blend 3 Tablespoons of cocoa (not hot chocolate mix), 1 Tablespoon of veg. oil. (Or you may use baking chocolate melted and cooled... 1 - 2 ounces. I rarely have the baking chocolate, so I use cocoa and oil for one ounce) Chill dough. Roll white dough into an oblong 12 " by 9". Roll chocolate dough same size and lay on top of white. Roll together until 3/16 " thick. Roll up tightly beginning at wide side. Chill. Cut 1/8 inch slices. Bake at 400 degrees 8 to 10 minutes. Makes 7 dozen cookies.
